Roasted tomatoes... Mmmm.

These little babies are delightful.  Such a yummy addition to just about any meal.  I love them on sandwiches and in pasta and mixed with feta or goat cheese as a filling or dip... you get the idea.  I never realized they were so easy to make until recently.  They will amaze you with the deep flavor of sundried tomatoes all the while keeping their juiciness.

Here's what you need...
Quantities are up to you.

Roma tomatoes
Dried herbs.  Oregano and garlic work well
Sea salt
a sprinkle of sugar
Drizzle of olive oil
Drizzle of Balsamic vinegar

Here's what you do...

Wash and dry the tomatoes.
Quarter the tomatoes lengthways
place them in your baking dish in a single layer
drizzle the oil and vinegar
sprinkle your herbs and salt
place in a 450 degree oven for about 25-30 minutes
Give them a little shake every 5-10 minutes to prevent burning and sticking

Yes, It is that easy.  Keep them handy in your fridge.  They won't last long.

Alright everyone I 'm finally going to do it.  This is for everyone who has been asking me for the recipes to the all time favorites Kalua pork and Shoyu chicken!!  As I have always said, these are super easy and no more difficult to make for 4 people as it is to make for 50.  They are ONO (delicious)! and when served with sticky white rice make a complete and easy meal.

 Here's what I use...
  • 4-5 lb pork butt or shoulder blade roast with a bit of marbling 
  • 2-3 tablespoons Hawaiian salt or kosher salt
  • 2 tablespoons liquid smoke... mesquite is most authentic
  • Ti leaves if you have or Banana if you don't (completely optional)  

Here's what I do...
If planning to use leaves (note: this is completely unnecessary if you follow my foil wrapping method but lends a bit more authenticity, but let's face it, if we were going for authenticity we should dig a hole and stuff it with hot lava rocks.  So  really... no need :) ) prepare them by removing the rib.  Lay out a long piece of aluminum foil and place the leaves on it.  Place pork on leaves and make small slashes all along.  Rub with salt, then liquid smoke.  Wrap leaves around pork as completely as possible. Wrap the foil tightly around the pork to make a watertight seal.  I do this 3 times.  Switching directions each time.  This ensures the moisture stays inside.  Let it sit at room temperature for 45 minutes.

Preheat the oven to 350 degrees.  Once oven is heated place wrapped pork in a large roasting pan. Fill with an inch of water. Bake at 350 degrees for 1 hour. Lower the temperature to 325 degrees F and cook for 3 and a half more hours or until tender. Cut a slit in the top of the package and shred with a fork before serving.   Reserve the cooking juices to pour as needed for flavor over the shredded pork.

You can also cut up and braise a bit of cabbage to add in as a variant. Serve it with sticky white medium grain calrose rice.  Simply delicious.



Ok now for the Shoyu Chicken

Here's what you need...

Marinade
To tell you the truth I do the marinade by feel and by what I have in the pantry.  It really is very forgiving.  The measures here are approximate but should lead you down the right path.
1 cup soy sauce
Juice of 1 medium orange or 1/4 cup pineapple juice
½ cup mirin which is a japanese sweet rice wine vinegar
½ cup water
¼ cup packed brown sugar
1½ tsp minced fresh garlic
1½ tsp peeled and minced fresh ginger (you can use dried also just use 1 tsp)

Mix all of these together and whisk till combined.

Get anywhere from 2-4 lbs of boneless skinless chicken thighs and place in gallon freezer ziploc bags.  Pour marinade over the chicken splitting between bags if necessary.  Zip really tight and place in fridge overnight if possible.  Try to give it at least 3 good hours to soak at minimum.  Remove bags from the fridge at least 30 min prior to grilling.  Fire up the gas or coals and grill these babies up.  The brown sugar and soy carmelize so nicely when grilled.  So ONO!!  (YUMMMMY)  Serve this with sticky white rice as well.  If you like you can take the remaining marinate and boil in a pan with a few tsp of cornstarch to thicken as a glaze.  Pour over chicken and garnish with chopped green onion.

There you have it!  Enjoy!



Yummy Caramel Sauce




This is the easiest, yummiest recipe for caramel sauce ever!  I use it everywhere.  Coffee, Ice cream, desserts, my spoon... you get the idea.  It has such a nice brulee flavour.  A little whipped cream, your favorite coffee and this sauce will very quickly replicate a coffehouse macchiato.  I used the recipe and directions posted here at SimplyRecipes.com .  I bought a plastic bottle like those used for ketchup and mustards at walmart.  Filled it up and store in the fridge.  If it thickens up just pop in the microwave for 15 secs and it'll pour well again.  ENJOY!

Mini Twix Cheesecakes

Man Oh Man!!  Just look at this yumminess here on this plate. 
This was Awesome! 

Never have I been a cheesecake person but this little personal size cheesecake here has changed my mind forever.  I think the Oreo cookie crust and the Twix in the center are what sold me on the idea to make it.  Boy am I glad I did.  
The best part is that they are personal sized so you don't get stuck eating a whole cake. 

This recipe was found here at gingerbreadbagels.com  I added the extra cookie crumbles on top.  I can never get enough Oreo cookie crust!!  The caramel sauce on top was that little bit of extra that I always need.

Lavender Birthday Cakes

Anyone looking to make a lavender birthday cake or cupcakes?  Here are a few that I have made in the last few years.  The one above was for my daughter's first birthday party.  This was my first ever attempt at a fancy cake or with using fondant.  It wasn't as bad as I thought BUT I'm no Duff.  I love the taste so I'll be trying it again.  It was a Butter yellow cake with Dulce de leche between the layers and buttercream just under the fondant.  The little cake was special for the birthday girl so she didn't have to break through fondant.

The one below was my first experience using gumpaste.  I had tried these butterflies with fondant the year prior to no avail.  I had such big dreams.  I wanted all the butterflies to stand up on their own but I didn't realize the effect the humidity would have on it.  They turned to putty.  This year I used the gumpaste and they worked very well. They all sat so pretty in the frosting.  Each was dusted with a lilac shimmer for added sparkle. As if the purple sprinkles weren't enough.

Elmo Birthday Cake


I ventured out on my son's last birthday to make him an Elmo Cake.  Wilton has a nice mold for the cake which can be found at most Michael's.  This was definitely a lot of fun, but oh was it a lot of work.  But DO NOT be discouraged.  It's just tedious not difficult.

I got some ideas for the cupcakes from this site.  I made my own eyes from white royal icing a few days beforehand.  I just piped circles onto waxed paper and once dry I then tinted more black and piped the pupils.  The face and nose were iced with the same frosting I used on the cake.  I made the mouths from chocolate melts.  I had a few break in the release so make sure you make extras.

So opposite of what we always say to do.  Right?  But so fabulous.  Came across FunkyLunch.com and I am now inspired to play with mi kids lunch.  Seems so simple doesn't it.  We just need to not be so rushed, plan ahead, and have some creativity.  I think I might at least have some creativity but I'm still working on the time part.  I seem to always be rushed.  Especially at mealtimes.  In any case hop on over to Mark Northeast's site and get your inspiration going.

They’re from the book, Sticky, Chewy, Messy, Gooey Treats for Kids by Jill O’Connor.  Our house is more an Ice Cream house so her pudding cups become our Ice Cream Cups.  Super simple.  Dummy proof instructions are provided at Bakerella.com.  I will be making these this weekend.  So excited!

Moistest Chocolate Chip Banana Bread

YUM!!  Our house favorite!  This is so good, so moist and disappears fast.  Everyone loves it!  We actually look forward to the bananas turning brown just so we can make some of this chocolatey goodness.  This recipe was my Aunty Emmas.  Well it started that way.  We have added and substituted items along the years.  Chocolate for nuts.  Brown for white sugar.  Added sour cream for moistness.  Tinkering in this recipe has actually paid off.  We won't talk about some of my failed attempts with tinkering.  Try it.  You'll love it. 

Recipe Ingredients

1 stick of butter (softened)
1 cup brown sugar
2 Eggs
1 tsp Vanilla
1 1/2 cups of all purpose flour
1 tsp baking soda
1/2 tsp salt
3 mashed brownish bananas
1/2 cup sour cream
1/2 cup chocolate chips

  • Grease 1 large bread loaf pan
  • Cream together the Butter, sugar, eggs and vanilla.
  • Add the flour, baking soda and salt
  • Add the mashed bananas and sour cream
  • Add the chocolate chips
Stir to incorporate but don't overdo it.  It will be lumpy due to the bananas.  This is one recipe that I recommend mixing by hand.  Bake it at 350 degrees for 1 hour and test with a toothpick or skewer.  

Try not to eat it all at once.  Hide it from the kids or husband if you need to and make sure you have lots of milk.  Great as a breakfast, snack or dessert.  Also great as mini loaves to give away.  Just bake for a shorter time.  (If my memory serves me it was around 40 min)

Wow!! I came across these the other day while browsing around the food web and just had to make them. Unfortunately I've been recovering from surgery and could really only muster the energy to make the frosting. Boy was it worth it! The whole bowl was gone in 3 days. Eaten all by me and eaten off of nothing but a little spoon. Sinful, rich and the yummiest thing I have had in a very long while. You should definitely try it out. Find it at 52 Kitchen Adventures. Definitely worth every effort.

On her page she also posts the recipe for her better than sex chocolate cake. The combination sounds to die for. Heck the frosting came really close to deserving the name itself. I will be trying it very soon.
